When you play Chivalrous Chevalier, you have to either bounce a creature back to your hand, or you have to compliment an opponent, which is just nice
The 'bleed' here refers to the fact that the holographic effect 'bleeds' onto the area of the card that is not usually holographic
Convoke can help them catch foes off guard and Chrome Host Seedshark intrigues me and works quite well with the convoke spells, but I think those options end up fitting better in a deck more dedicated to that kind of strategy
